Sweet Potato Protein Muffins

Ooooh goody, I did a thing! I gave a nutrition talk at Revolution Fitness Studio last week and came up with this recipe for the occasion.

  • grated carrots and walnuts

  • orange zest and cocoa powder

  • blueberries, lemon and poppyseeds

  • the possibilities are endless, really!

These muffins have a fairly dense texture (and surprisingly, they are better cold in my opinion!), which comes from steamed sweet potato.

The macros, for 1 muffin, in case you care:

  • 8g protein

  • 15g carbs (3g fiber, 3g sugar)

  • 2g fat

  • For a total of 110 calories

That 2:1 carbs to protein ratio also makes them them ideal pre- or post-workout snack!
